Provence & Côte d’Azur: Pommes de terre back in fashion

Bring back potatoes

Potatoes fell out of fashion during the low-carb diet boom a few years ago, which is too bad considering potatoes are high in vitamins B and C, potassium and fibre, as well as complex carbohydrates.

A plain baked potato eaten with the skin contains half the daily amounts of vitamins C and B6 recommended for adults, with only 220 calories and zero grams of fat.

A healthy dollop of yoghurt can replace butter or sour cream, and it’s best to keep the skin on as that is where the fibre and potassium are located. Pesticide residue also accumulates here, so it's best to buy bio.
